A mellow, complex cave-aged cheddar made from 100% grass-fed raw cow’s milk during the grazing season. Produced in collaboration with our Amish friends in Lancaster, PA, this cheddar is made with native cultures and minimal salt, then aged 14-24 months on ten-pound blocks with a natural rind. Slightly softer than a typical cheddar, it develops lovely hints of crystallization with age and delivers a balanced, approachable flavor. Weight ranges between 6.85 - 8.11 oz.
This cheese is produced by the award-winning Bobolink Dairy & Bakehouse on their regenerative family farm in New Jersey, founded by Jonathan and Nina White. Bobolink has pioneered artisanal farmstead cheesemaking in the U.S., guided by deep respect for soil health and animal well-being, producing grass-fed raw milk cheeses with deeper flavor, livelier texture, and true terroir: a pure expression of pasture and place. Each cheese is made with native cultures, minimal salt, and traditional rennet, allowing the land and the milk to speak for themselves.
IMPORTANT: For Tuesday and Thursday delivery, your order must be placed by Sunday. For Friday, Saturday and Sunday pick-up your order must be placed by Wednesday 3 PM.
