Collards (bch)

Collard greens are part of the cabbage family, and are closely related to kale and mustard greens. They have broad, smooth leaves with thick stems and are hearty and have a sturdy texture that holds up well with long cooking times. They are often cooked with smoked or salted meats, onions, vinegar, pepper, and salt.
