Ube, also known as the purple yam, is a starchy tuber with a sweet, nutty flavor and aroma, and a vibrant purple flesh. Ube has a mild, sweet flavor with a slightly nutty, vanilla taste. Ube is a staple of Filipino culture and is commonly used in desserts, cakes, ice creams, cocktails, and hamburger buns. Some popular Filipino desserts that use ube include ube halaya (ube jam), ube macapuno, and halo-halo. Ube is high in potassium and contains vitamins A and C. It's also a good source of resistant starch, a type of complex carb that can help with gut health.

Ube can be prepared in a variety of ways, including boiling, baking, mashing, and frying. Fresh ube should be thoroughly cooked because it contains some toxins when raw.
